Chili Peppers Selection
We use Mexican-grown chillies, hand-selected for their flavor, texture, and color.
Our philosophy is simple: only the best.

Zero tolerance for damaged or imperfect chili peppers.

Harvesting & Sorting
We respect each variety’s natural harvest season. For example, jalapeños are harvested in July and August, then sorted by size and ripeness to match specific can formats.

Deep Washing & Preparation
Chili peppers are thoroughly cleaned to remove impurities, then prepared according to use whole, sliced, dried, or deseeded (as with chipotles).

Cooking & Artisan Processes
Depending on the product, we apply escabeche, adobo, or traditional techniques like wood-smoked chipotles using guava leaves,a process that can take up to 7 days.

This is what gives them their unmistakable aroma and depth of flavor. .

Immediate Packaging & Preservation
We pack our products within 24 hours of processing to ensure maximum freshness. We use white cane vinegar as a natural preservative, no artificial additives needed.

Sterilization & Final Quality Check
We apply a thermal process that ensures safety and long shelf life without compromising the flavor, color or texture of our ingredients.

Every can is a point of pride.

We pay close attention to the presentation: rich red adobo color, jalapeños with perfect crunch, clean vegetable cuts, and balanced portions.

Chipotle
San Marcos®

Smoky flavor, juicy body, artisan essence. 

Our chipotle stands out for its soft texture and intense flavor, thanks to an artisanal smoking process with wood and guava leaves that lasts up to 7 days. Each chili pepper is carefully cleaned and trimmed to allow better hydration, resulting in a smoother, juicier texture. 

The result: a vibrant red adobo, free from artificial preservatives, with that homemade, natural flavor that has made our chipotles a source of Mexican pride. 

Jalapeño
San Marcos®

Crunchy, herbal, and full of unique aromatic notes. 

Our jalapeños are hand-selected and preserved without texturizing agents, keeping their natural crunch even after opening. The balanced blend of vegetables like carrots and onions enhances their flavor and makes them a versatile ingredient.
